I motivi per cui dovremmo mangiare i germogli di bambù
In Asia le proprietà dei germogli di bambù sono note da secoli. Di questo super food se ne parla anche in un manoscritto trovato in Cina e risalente al periodo della dinastia Tang(618 dC – 907 dC).
I germogli di bambù sono consumati comunemente – sia freschi che conservati – anche in Corea, in Giappone, in Thailandia e nelle Filippine. Tuttavia, solo di recente questo vegetale ha cominciato a far capolino nei piatti occidentali. E non potrebbe essere altrimenti visto che, a fronte di un apporto calorico decisamente modesto, i germogli di bambù hanno interessanti caratteristiche nutrizionali.
I valori nutrizionali
100 grammi di germogli di bambù apportano solo 27 calorie, ma forniscono 2,6 grammi di proteine, 5,2 grammi di carboidrati di cui 3 grammi di zuccheri e 2,2 grammi di fibra alimentare. I grassi saturi sono solo 0,3 grammi.
I germogli di bambù sono ricchi di vitamina A, vitamina B6, calcio, magnesio, potassio e manganese.
Quali sono le varietà consumate
Tra le varietà maggiormente consumate ci sono i germogli di Phyllostachys edulis, Phyllostachys bambusoides, Dendrocalamus latiflorus, Bambusa oldhamii, Bambusa odashimae, Fargesia spathacea e di Bambusa blumeana.
